Spanakopita Bites…..

One of my favorite appetizers to make is Barefoot Contessa’s Dinner spanakopitas…..but if you don’t have the time here is my solution…..
I used Fillo Shells instead of sheets to cut my time in half….works beautifully! they are already made and all you do is stuff them and heat!


1 Tablespoon vegetable oil
1 small onion, chopped
3 green onions, chopped
10 ounces frozen chopped spinach. thawed and squeezed dry
4 to 6 ounces domestic feta cheese, crumbled
1 cup ricotta cheese
1 egg
Salt and pepper to taste
2-3 Boxes Frozen Fillo Shells
8 tablespoons butter (1 stick), melted
2 tablespoons vegetable oil

**** I also add……

a handful of parmesan grated cheese

2 -3 tablespoons of Pinenuts

few dashes of grated nutmeg

Sea Salt to taste……

Preheat oven to 375 degrees

Heat 1 tablespoon of oil in medium skillet over medium heat. Add white and green chopped onions; cook until softened, 3 to 4 minutes.

Meanwhile, mix spinach, feta, ricotta and egg in medium bowl. Add cooked onions and season with salt, and pepper.  Add them to the spinach. Mix in the eggs, Parmesan cheese,  the nutmeg, salt, and pepper. Gently fold in the  pine nuts.  When slightly cooled  Stuff the Mini Fillo Shells and place on cookie sheets, bake for 10-12 minutes until heated through and piping hot…..


Soooo good! and a great appetizer in just a little bit of time!
