Slow Cooker Pork Roast & Tulips

Well, it’s true….more snow on it’s way! As a matter of fact it’s just starting…..As if Mother Nature decided to sprinkle salt all over Pennsylvania,….How can this be? I was just saying hello to my green grass and  thumbing through my tulip catalog! Oh, well…….grease up the plow and get my Wellies out…How many more weeks till Spring?…Too many…..In the meantime enjoy that what is yet to come…..I promise…..

Have a long laundry list of “To Do’s” today…. (need to get back to my Tulip catalog :)) so what better time to try this recipe I found online for a slow cooker Pork Roast so easy to prepare, and although its been on  only an hour it smells amazing! So simple, I did omit the dried cranberries – not a fan…I used a box of turkey stuffing I had in the pantry….took ten minutes to put together…

Slow Cooked Pork Loin With Stuffing


1 box, about 6 ounces, seasoned stuffing mix

4 tablespoons butter

1/2 cup chopped onion

1/2 cup chopped celery

1/2 cup diced carrots, optional

1 tablespoon chopped fresh parsley or 1 teaspoon dried parsley flakes

1 cup chicken broth

1/2 teaspoon salt

1 cup dried cranberries, optional

1 boneless pork loin roast, about 2 to 3 pounds

*** Rub for pork ***

1 tablespoon brown sugar

1 teaspoon Creole seasoning blend

1/2 teaspoon salt

Dash black pepper

1/2 teaspoon garlic powder

1/2 teaspoon ground sweet paprika


Lightly grease a 5 to 6-quart slow cooker.

Put stuffing mix in a large bowl.

In a skillet, cook the onion, celery, and carrots in the butter over medium low heat until softened. Combine the onion mixture with stuffing mix, parsley, chicken broth, 1/2 teaspoon salt, and dried cranberries; mix well. Spoon stuffing mixture into the slow cooker. Combine the rub ingredients and rub over the pork roast. Place pork on the stuffing mixture. Cover and cook on LOW for 7 to 9 hours, or until pork is cooked through.
Serves 4 to 6……

  1. Save the pork roast, send me the tulips, the crocus, and the daffodils.The geese flying north will be a happy sight
    At this point, I would not even mind looking up and having bird do it’s business on my face!
    Bring on the heat for I am more than ready.

    • I know! the tulips are so beautiful….I’m thinking WAY ahead to Easter! I too am ready for anything above 20 degrees!
