Choccolate Espresso Cheesecake

A small slice of this heavenly indulgence will not be enough!

This recipe is from one of my “Spirit of Christmas” books….I have collected Christmas books for over thirty years and this series is my favorite……I was so sad when they ended the book series after twenty years! I have some books that are from the early eighties! yes I know I  am a Christmas Junkie! Wait till I show you my Santa collection….. sigh……I spend more time dusting than reading!

I plan to go through my recipes and all the holiday books for some fabulous dishes……..I will be sharing recipes and projects from my books with you……yes I know – There goes the diet!

I have so many that at one point I thought about doing a blog just like the movie “Julie & Julia” only with Martha Stewart….whom I just love and have loved since her first magazine and her first show….which by the way if your reading this Martha please bring back the original show format……




21/2 c graham cracker crumbs

1/2 c plus 2 tablespoons butter or margarine, melted

2 teaspoons Almond extract

4 pkges (8 oz. each) cream cheees, softened

2/3 c sugar

3 large eggs

8 squares ( 1 oz. each) semisweet baking chocolate, melted

1/3 c milk

2 teaspoons espresso powder

Garnish: Chocolate curls

Preheat oven to 350 degrees……

In a medium bowl, combine cracker crumbs, butter, and Almond extract, stir well.  Press mixture on bottom and 2 inches up sides of a 9-inch springform pan.  Set aside.

In a mixing bowl, beat cream cheese at high speed with an electric mixer until creamy.  Gradually add sugar, beating well.  Add eggs, 1 at a time, beating well after each addition.  Add melted chocolate, beat well.  Combine milk and espresso powder, stirring until powder dissolves.  Add to cream cheese mixture, beat until smooth.  Pour mixture into prepared crust.

Bake 45 to 50 minutes or until center is almost set.  Let cool to room temperature in pan on a wire rack; cover and chill 8 hours.  Carefully remove sides of springform pan.  Garnish, if desired.

Yield: 12 servings
