Funny on Friday Cheesecake

Well its Friday and time for a chuckle to start your weekend……..

There are so many stories I have to tell – I should write a book – maybe in my next life……but for now let me tell you about the time I made three cheesecakes for my daughters school bake sale….what’s so funny about a cheesecake?…..well you may never look at one again without laughing!

For many, many years I’ve been known for my cheesecake….so when my daughter volunteered me to make one for the school bake sale I sighed and added it to the list of things to do that night….now cheesecake takes ten minutes to put together but two hours to bake and then at least one hour to cool and then refrigerate….so at 7:00 pm I started my task….in the oven at 7:20….put “Dawson Creek” on ( yes, a long time ago) and sat back…..one hour later the timer went off, cake went on windowsill to cool…..(forgot to pull the screen down) and “BAM”…no Emeril was not in the house….. the cake fell off the sill, and down to the patio below…needless to say the wildlife celebrated that night….panicked I ran to the fridge…nope….not enough eggs! Threw on my sweats jumped in the jeep and off to Pathmark (open 24 hours) grabbed a second set of ingredients dashed home….whipped and poured ……into the oven…9:15..ok…so I’ll stay up a bit later tonight….10:15 timer goes off…..back on the windowsill….yes the screen is down….will be in fridge by 11:00…..all is right with the world…..I must have dozed off….woke up to the sound of slurping…..Slurping?…..its 11:05…and our dog, Magnum, is on the kitchen floor foaming at the mouth….ummmm, no, it’s cheesecake!!!

So determined was I to do right for my child that I once again jumped in the jeep, running through Pathmark in my pj’s….who would I run into at this time of night?….head for the ingredients, by now I can do this blindfolded…..no eggs! WHAT!!!! Alas, I have met the enemy and I am theirs! Then, this crazy woman, in pink pajama pants and a Disneyworld sweatshirt, tears out of the parking lot….down to the Wawa in the next town….Yesssss – Eggs!

As I walk back into the house, it’s now 11:45 pm….my husband shakes his head, uttering something about this evening being a nightmare…really? For who?

Well cheesecake # 3 finally made it into the fridge around 3:00 am…..I walked into the bake sale…only to see eight cheesecakes majestically waiting to be sold!

I went home, made myself and the dog an omelet with the remaining eggs and realized the cake would bring in about  $10.00…..it cost me $36.00 to make….sigh…..what we do for our children….

Eat some cake this weekend!
