New Years Resolutions……

First Monday of the new year and my FIVE New Years Resolutions (Made at midnight on Dec. 31st while drinking champagne and eating a chocolate éclair) are a priority. And knowing that Spring is on its way, eventually, up the mountain! I'm starting with my First resolution - my new (Yet Again) diet! So far so good.......well, I made it thru breakfast without cheating, although those Danish butter cookies have a "Come Hither" look to them! but I will not cave. Autumn Revisited……

Autumn Revisited!....It's been two years since we launched PineRidge Hills......where did the time go? We have been through two Christmas', Easter Sundays', Summer BBQs', but this is our third Autumn so lets start our anniversary trip with our first season.   This is absolutely my most favorite time of year. Country Style Afternoon Tea…..

I have been in love with "Tea Time" since I was a little girl growing up drinking tea the way other kids drank soda! Both grandmothers were Irish and English so afternoon tea was a normal event at Nan's house.....Although I married an Italian, who drinks Espresso in the afternoon, I still kept my "Tea Habits".....and keeping the tradition doesn't mean Afternoon Tea has to be over the top, as laid back as we are here in the country, my Country Style Afternoon Tea is simple but a tradition none the less.... Fridays on the mountain…

Fridays on the mountain are always a bit laid back,  after running all week its nice to just sit on the deck and welcome the start of the weekend.....some of my neighbors join me...... The bird feeders are at standing room only! I think we need to start taking reservations. A new family of deer have come to live here, we have six "Bambie's" running through the River Birches all day, what a comedy show! Childrens’ Picnic….

Here in Northeast Pennsylvania our children are now into their fifth week of Summer Vacation!  I know......you can see the toll already taken on the Moms....so what can you do to keep the energy flowing and productive? Give them full rein to run a muck! How do you reel them back in? host a Children's' Picnic under the old Birch trees..... .... the faster they run out of steam the faster you can get that ten minute breather ..... yes I remember those ten minute breaks.  I used to live for them! Weekend Brunch….

Well, its Saturday morning and we got a call last night that our "City Friends" need a weekend in the country! So it looks like summer has un-officially started. A weekend brunch came to mind. The guest bedroom is done and waiting, the deck is clean and the menu is planned and simple.
