New Years Resolutions……

First Monday of the new year and my FIVE New Years Resolutions (Made at midnight on Dec. 31st while drinking champagne and eating a chocolate éclair) are a priority. And knowing that Spring is on its way, eventually, up the mountain! I'm starting with my First resolution - my new (Yet Again) diet! So far so good.......well, I made it thru breakfast without cheating, although those Danish butter cookies have a "Come Hither" look to them! but I will not cave. There is turkey and chicken in the fridge, fruits and vegetables are overflowing on the countertop and of course my diet coke is … [Read more...]

The Old Bench….

What is it about The Old Bench that makes you want to sit and ponder? I always imagine where they started out and where they end up.  The people who sat there contemplating their lives.....the conversations that were heard....maybe even confessions.......Somehow you always can see things clearly once you stop and sit, its as if you took a "Time Out" from life for just a moment and yet be able to watch everyone else march past you never even realizing your there. Its somehow empowering.....Some of my best decisions were made sitting on a bench, My husband proposed to me while sitting on … [Read more...]

Autumn Revisited……

Autumn Revisited!....It's been two years since we launched PineRidge Hills......where did the time go? We have been through two Christmas', Easter Sundays', Summer BBQs', but this is our third Autumn so lets start our anniversary trip with our first season.   This is absolutely my most favorite time of year. The crisp air and vibrant colors, the wool blankets coupled with hot spiced tea.....the fireplace ablaze with the smell of hickory. Even my "Fur babies" love Autumn. They actually prance around when they see their sweaters coming out of the closet. This year, we have finally made a dent … [Read more...]

Pennsylvania Roads…

So what new places did you visit this summer? My "Pennsylvania Roads" Summer Bucket List kind of fell to the wayside ..... all my good intentions kind of slipped into the 2015 "I'll do it next week" bucket list....and that bucket is now overflowing.....sigh....oh well there is always 2016!  Well, although I didn't get to Martha's Vineyard or the Biltmore in Ashville, I did get to enjoy what, for us here in Northeast Pennsylvania,  consider a  "Local" gem....so my Road led me to Jim Thorpe, our beautiful County seat and just a ten minute  ride up another mountain from PineRidge Hills! as a … [Read more...]

Postcards from Paris…

Postcards from Paris......While looking for an envelope this morning I found an old leatherbound photo - book that was tucked away in the bottom of the cabinet.  When I reached for it, realizing it wasn't the package of envelopes I was hastily looking for, I pushed it to the side knowing for sure my envelopes must be hidden behind the books....they were......after addressing the few that I needed and stamping them and running up the road to the mailbox....which I made just in time as the mailman came slowly up the hill.  He stopped and chatted, collected the mail and handed me two envelopes … [Read more...]

Country Farm Stands….

Time to start visiting your country farm stands....Summer brings out the best in what the farmers market and orchards have to offer......living in the country has its advantages when it comes to fresh - everything! The blueberries and strawberries are best in mid-summer. When it comes to Apples and vegetables we have two local farms that we visit weekly.  We also have several Farmers Markets in our area....but did you know.....not everything is as it seems.  Farm stands are big business now a days.  especially within city limits.  When you shop at a farm stand remember that New England … [Read more...]

Kentucky Derby Brunch…

Tomorrow is the 141st. "Run for the Roses", or as most know it as the Kentucky Derby...."the most exciting two minutes in sports".... the Kentucky Derby is a 1.25 mile race for three-year-old thoroughbred horses. It is the first leg of the American Triple Crown and is followed by the Preakness Stakes, then the Belmont Stakes. Unlike the Preakness and Belmont Stakes, which took hiatuses in 1891-1893 and 1911-1912, respectively, the Kentucky Derby has been run every consecutive year since 1875. A horse must win all three races to win the Triple Crown.  The Derby is the crowning event after a … [Read more...]

Lakeside Weekend…

So Saturday morning we awoke to bright sunlight and warm air flowing thru the windows....YES! Down the stairs, coffee is brewing for the "Love of my life", tea is in my mug and the smell of bacon is throughout the entire kitchen....The sun is up and I'm on the deck inspecting the Tulips, Croctus', and Hyacinths.....everything survived that snowfall we had two weeks ago....So with camera in hand I started "Tip-toeing through the tulips" so to speak! I had forgotten what the colors all were from when I planted all 240 bulbs! And the aroma of them! So delicate yet so … [Read more...]

Lá Fhéile Pádraig Sona Daoibh!

.........Translation: HAPPY ST. PATRICKS DAY! How's that for a mouthful.........! My maternal grandmother and both of my Great-Grandmothers were born in Ireland and it is number 2 on my "Bucket List" to visit there one day....I have found cousins through Ancestry.com and plan on doing the DNA test next month that they offer! Who knows what I'll discover....The results will make for another post down the road! but today everyone is Irish....and the kitchen smells wonderful.   I remember my grandmother humming a song and every few words sounded so strange to me, that's because she would say … [Read more...]
